Tuna Tomato Pasta with Olives

Ingredients
  

  • 400 g penne
  • salt
  • 3 tbsp olive oil
  • 1/2 onion [medium sized - finely chopped]
  • 2 teaspoons garlic clove [minced]
  • 1/2 teaspoon red pepper flakes
  • 2 tuna in oil (canned) [drained]
  • 1 anchovy fillet [minced (optional)]
  • 400 g tomato (regular)
  • 12 Kalamata olives [pitted]
  • 1/4 cup fresh basil [to serve – optional]

Instructions
 

  • Cook pasta according to packaging instructions.
  • Meanwhile chop and prepare all ingredients for cooking.
  • Heat olive oil in a large sauté pan on medium heat. Once the oil is hot, add the onions, cook until onions are soft add minced garlic, and red pepper flakes to the same pan. Cook for about 30 seconds.
  • Add drained tuna and anchovy. Let simmer for a minute.
  • Stir in the crushed tomatoes and olives. Bring to a simmer and reduce heat to the lowest setting to gently cook while you cook the pasta.
  • Drain the pasta and stir into the sauce. Toss with fresh basil.
