Ingredients
  

  • 1 slices bread brown or white - crustless
  • 200 ml milk
  • 1 onion sliced
  • 1 garlic clove
  • 15 ml oil
  • 1 tsp butter
  • 500 g beef mince
  • 2 egg
  • 300 g basmati rice

Sauce to pour over

  • 15 ml curry powder
  • 5 ml salt
  • 15 ml Chutney
  • 5 ml apricot jam smooth
  • 10 ml Worcestershire sauce
  • 2.5 ml ground turmeric extra for sprinkling
  • 15 ml brown vinegar

Instructions
 

  • Pre-heat oven to 180C. And make rice according to packaging instructions, adding some turmeric to the water to make the rice yellow. ( you could also add some raisins to the rice close to the end of the cooking time).
  • Soak bread (white or brown) in milk.
  • Fry onions and garlic in oil and butter.
  • Mix together all sauce ingredients and add to softened onions and mix well.
  • Drain and mash bread (reserve milk).
  • Fry mince with bread in a pan over low heat, stirring until meat loses it's pinkness. Remove from heat.
  • Add 1/2 the eggs and mix well. Then spoon into a greased baking dish and level the top.
  • Beat remaining eggs with reserved milk and a pinch of salt and turmeric. Pour over meat mixture. Stand dish in larger pan of water (to prevent drying out) and bake, uncovered for approx. 35 min or till the custard sets... Enjoy with some extra chutney and yellow rice!!!!

Notes

You can easily make a double batch of this recipe and freeze, freeze before adding the eggs. Then defrost and finish off with the egg mixture.
