Pumpkin Pie (User Submitted)

Ingredients
  

  • 600 g pumpkin [peeled and cubed]
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 egg [beaten]
  • 1 teaspoon baking powder
  • brown sugar [to taste]
  • ground cinnamon [to taste]

Instructions
 

  • Preheat oven to 200C
  • Cook pumpkin in a saucepan of boiling, salted water over medium-high heat for 10 to 15 minutes or until tender. Drain in colander.
  • Return pumpkin to the warm saucepan. Shake saucepan over low heat for 30 seconds or until excess moisture evaporates. Remove from heat.
  • Using a potato masher, roughly mash pumpkin
  • Mix butter into mashed pumpkin while warm. Then add flour, beaten egg and baking powder.
  • Transfer to Oven safe container. Sprinkle liberally with brown sugar and cinnamon and bake for 15 minutes

Submitted by Helen Dreyer for the Winter 2015 Recipe Competition. This is Rose Dawes pumpkin mash. Poor Rose, I hammered it out of her a hundred years ago when she served it at her dinner party and the dish got licked by me. Been in demand from my guests ever since.
