Quick bread recipe.

Not much kneading required to make this bread. No yeast, therefore no rising time for the dough to rise.

Enjoy this yummy bread with butter and good quality jam. It is also great just with butter alone, a wonderful accompaniment to soup, with roasted garlic, with cheese or any other favourite bread topping of yours.

Ingredients
  

  • 375 g all-purpose flour
  • 135 g wholewheat flour
  • 40 g butter melted and cooled
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 375 ml buttermilk
  • 1 tbsp demerara sugar soft brown sugar

Instructions
 

  • Pre-heat oven to 200C.
  • Place flour, bicarbonate of soda, salt and sugar into a bowl. Mix well, make a well in the center.
  • Pour in the melted butter and the buttermilk, combine all ingredients. The dough should be fairly moist.
  • Put some flour on your hands, remove the dough from the bowl and place on a floured surface, fold the dough from the outside edges in a couple of times (do not over knead). Shape into a round loaf.
  • Dust a wooden spoon with flour, Make a deep cut with the wooden spoon in the bread in a cross shape. Place bread on a floured baking tray, sprinkle with a little flour and bake in a pre-heated oven for 30 min. It should sound hollow when tapped.
